Homemade Wheat Noodles
2 Cups of Whole Wheat Flour
½ teaspoon of salt
(optional) 1-2 teaspoons of sugar
3 large eggs
(optional; melted butter, 2 tablespoons)
Mixed all dry ingredients together, add wet. Knead to smooth (rest for a hour).
Roll (shape), cut, and boil. :)
Homemade Oatmeal, Raisin, Chocolate Chip Cookies
2 Cups of flour (unbleached is great)
1 tablespoon of cinnamon
1 teaspoon of baking soda
1 cup (2 sticks of butter, soft)
1 cup of firmly packed brown sugar
1 cup of granulated sugar
2 eggs
1 teaspoon of good vanilla extract
2 cups of quick-cooking oats
1 cup (or a little more) raisins
1 cup (or a little more) chocolate chips :)
Mix all the dry ingredients together first (get in there and blend) then add your butter and work it in before you add the rest of the wet. That works best…
Oven at 325 about 10-12 minutes. Yummy!
Homemade Wheat Bread
Make sure the ingredients are at room temperature before playing .
4 Cups of Whole Wheat Flour
2 tablespoons of dry yeast (in the center of flour) Prove your yeast by adding a little warm water to yeast in center of flour.
2 tablespoons of sugar (add with flour)
2 tablespoons of dry milk (optional, but I love this)
1 teaspoon of salt (make sure it doesn’t touch the yeast, until ready to blend)
1 ¾ cups of warm water (or 50% milk and 50% water)
1 tablespoon of gluten (optional, but I love it)
2 tablespoons of oil or butter (optional, but I love it)
Once you know the yeast is active, then blend in your wet. Knead for about 10 minutes, rest.
Knead again for another 5 minutes, then add some butter or oil to the outside of the dough and work it in :) Then, let it rest for a hour at room temperature and cover, I use a towel (important to let it rest). Then, knock your dough down and knead for a couple of minutes before putting the deliciousness into a pan. Let it rise in the pan for another ½ hour, then:
Oven 350
40-45 minutes, depending on the accuracy of the oven. :) If the top looks golden brown, it’s done.
